This healthy french fries substitute will hit the spot and leave you wanting more and more. This recipe is taken from one of my FAVORITE cook books ever, Super Nutrition For Babies by Erlich and Genzlinger. I highly recommend it, not only for new mamas, but anyone interested in food as medicine. Ingredients: 2 medium zucchini 2 tablespoons (28ml) milk (cow or coconut) 1 egg, lightly beaten 1/4 cup (32g) arrowroot starch 1/2 cup (about 50g) fresh grated cheese (preferably raw) 1/4 cup (21g) unsweetened, unsulfured shredded coconut Garlic powder Celtic sea salt to taste 3 tablespoons (42g) butter Instructions: Cut the zucchini in half and then into small, fry- length spears. Mix the milk and egg till combined Combine arrowroot, cheese, coconut, garlic powder, and salt in a small bowl Dip the spears in the egg mixture and roll the spears on arrowroot mixture Heat the butter in frying pan over medium heat Add the coated zucchini fries to pan and cook until golden brown, turning with a long spatula.
