SUPER CREAMY SUN BUTTER

Using seed butter instead of nut butter also ensures a completely safe allergy option for when packing their school lunch.
Nut butters are a wonderful healthy alternative to conventional peanut butter but can be grainy and therefore too off putting for the littles. The best alternative I have found in terms of flavor and consistency is this super creamy sun butter made out of roasted and ground sunflower seeds. 

Ingredients:
4 cups roasted, unsalted sunflower seeds 
3 tablespoons coconut oil 
2 tablespoons honey 
½ teaspoon salt 
1 pinch cinnamon 

Instructions:
Roast seeds on a baking sheet in a 325 degree oven for about 15 minutes, until the seeds are golden.
Place roasted seeds in a large food processor and process or high powered blender and blend. If you have a small one process in batches. 

Add in the coconut oil and continue to process until creamy for several minutes.

Add in honey, salt, pinch cinnamon and finish.

Place into mason jars with a spatula for safe keeping.

Cut up celery sticks and apple slices or spread onto a tortilla with sliced banana and roll it up for a sweet burrito!
